You skipped over the textbox because the text is usually the same generic bit, but when you collected the 16th star coin it told you to go to the hallway to the right of the level designer.

In SM64, 70 stars are required to beat the game. Any of the game's 120 stars can be gathered giving the player a lot of choice in how they want to go about playing the game. (In my first run I did not realise Big Boo's Haunt existed.) This is the standard that most "star get 3D Marios" have. However in Sunshine, in order to beat the game you need 7 specific shines. If a shine is not required in order to obtain one of the 7 there is no point in obtaining it (unless going for 100%). Despite how open the game appears the player actually has no choice in how they want to collect shines as the same 7 shines need to be obtained to beat the game every time. The numerous secret shines and bonus levels just create an illusion that the player has choice in how they play the game. Once this illusion is broken, the player realises that in the world of Super Mario Sunshine there is not choice, and there is no free will. Ultimately existential dread overcomes the player, knowing all they did was for naught; everything is meaningless.

That star coin is pretty hard to get, from what I remember at least. I know it's Cape and Wing Cap rules where diving gets you more height than gliding, but the controls are so unwieldy that I don't blame rao for finding some pretty rad cheese instead.
also I think that invincibility star is how the game WANTS you to get the star coin surrounded by penguins but shoving yourself in between them worked just as well

I think that the game really had in mind that you would be pressing up to jump, and remapping it just probably makes it feel wonkier. Personally, I think the wing cap controls just fine, i don't actually get what's confusing or strange about them. Just pretend you're controlling an airplane, not a stocky small italian man

The rocket nozzle seems to work a bit differently in whatever version raocow's playing compared to what's on newgrounds, although I could be wrong. There were many jumps in this level that I had to make by doing a double jump rocket on the start of the second jump, which he seemed to make very simply by just rocketing.
Getting the red coins in this level was kind of a chore, with just how spread out they are and how big the level is.

I guess that's possible. For the most part, the version on newgrounds doesn't seem to have the same framerate issues that raocow's version does, like on the file select screen , so I figure things could be different there.

It's great how Bowser explains his plan to summon the meter of ultimite destruction to Mario after you beat him and then you warp outside the castle and he just explains it exactly the same again

Well it is a decent hack but sometime its just too repetitif there no level that actually pop in your face and your like oh yeah that level they all ressemble themselves and just monster along the way.

I'm honestly surprised at how raocow had such an easy time his first run through the 2nd Bowser stage. Those blocks with coins on that second screen that you needed to break were kinda wonky for me and I had to spam the spin move for them to break.
Also, regarding the castle secrets, I don't know if raocow's monitor is on a pretty low brightness level, because I feel like there are some that he should've seen by now, but if not, then I would say taking the approach other people mentioned and just hug walls.
Also, who even want's the "meter of ultamite destruction" when you can have "Ragnarok's Foot"

And in the same video he uses a FLUDD to navigate a room then inexplicably forgets it exists every time he reaches the final jump at the end of the room where it's fairly necessary to reach.
