It's actually Oban Star Racers
AAAAAAHHHHHHHHH THAT WAS MY FAVORITE SHOW WHEN IT WAS ON.
One of the things that helped me get through my worst year of school in one piece. Also the first time I remember crying thanks to a work of fiction.
Where are you rewatching it? I know Amazon Prime has it but I only have Student.
I'm currently just watching it directly from Youtube.
Not the highest quality you could find it in (they seem to be direct tv-broadcast recordings, so there's a couple of rather blatant advertisements that show up occasionally) but it satisfies my needs.
I swear its this show that first ever got me into creating my own fantasy-styled creatures and drawings (or at least the first that made me really passionate about it), having been inspired by the super diverse cast in this thing (and the fact that its basically a really good racing video game but with a good plot and good characters attached to it). It's safe to say that, considering art continues to be a very big part of my life, this show holds a very special place in my heart.

You call Samurai Jack anime-esque?
It kinda is actually, haha. Considering that Jack flows from fuedal Japan aesthetic to science fiction territory, which are both very common in anime. The art style is very angular, kinda Panty and Stocking esque. Its not like too many american cartoons, but also lacks the hyper stylized look of anime. So a hybrid, so I can understand grabbing a guess there.
Along with having an episodic structure with more continuity than you might expect from an american cartoon.
Do suppose you're right. ¯\_(ツ)_/¯
I was mostly thinking of just the art style when I made that comment (but didn't even think of the fact that anime like Panty and Stocking are out there), the plot-style alone of the show is definitely more eastern-esque than most western cartoons are.
