Looking through the options, the closest you can get to that is the "Precise" control scheme. With that on, rather than cycling through weapons, you get one button for each of your three weapons. Then if you want to switch out a particular one with a dropped powerup, you hit the button for...

Not as far as I can see. You can change the button you use to pick up an item; you can change whether you automatically pick up an item; and you can change whether you automatically switch to a new weapon you pick up. That's all I see relating to picking up new weapons.

Also worth noting, Angel Crush isn't a particularly frantic level so switching there isn't going to get you hit by an oncoming enemy or anything.
