Still, I'd have loved to see FLUDD and co. return not as stage gimmicks, but as extra tools to help a little bit with the platforming in some spots.

No, SM64 does indeed work like that from what I've heard from pannenkoek videos- there's a model, and then there's collision geometry, and they don't have to match.
